Confession time: I don’t bake. I completely stole this recipe from my dear friend, Dayana Forero-Lopez. She even baked these for me so I could photograph them (yes, I’m hopeless). Despite my lack of credibility as a baker, I had to share this favorite of mine—they are gluten-free, lightly sweet, and free of processed sugar. My kids go nuts over them and don’t realize they are eating ‘healthy cookies’. Satisfy your sweet tooth even when beach season is upon us!
Honey & Chocolate Gluten-Free Cookies
1 egg
4 tbsp butter (I love Kerrygold Pure Irish Butter)
1 tsp baking soda
1 tsp honey
2 cups almond flour
1 tsp vanilla extract
1/2 cup semi sweet chocolate chips*
*Tip: use Lily’s Dark Chocolate Baking Chips for a sugar-free, stevia-sweetened chocolate chip that tastes AH-MAZING! Bake at 350º F for 20-25 minutes until golden. Remove from oven and allow to cool. Enjoy!!
